The BEST Game Day Snacks!

September signifies a lot to me – back to school, summer slowly turning into Fall, the introduction of all things pumpkin AND college football! If you are from Oklahoma or have lived here long enough you are wise not to plan anything on Saturdays other than a dedication to two famous words BOOMER SOONER or go pokes! {notice the emphasis on BOOMER SOONER, just sayin’}

Enjoying your favorite team with family and friends requires your favorite eats as well {tip: having yummy food will entice the non football watchers to come enjoy the Saturday tradition as well!}

Here are a few of my family’s favorite Game Day Snacks:

Taco Touchdown Pizza 

This is a fun twist to ordering a traditional pizza for game day. Your guests will sure to be coming back for seconds. Be sure to make plenty!

Ingredients:

  • Pillsbury Whole Wheat Pizza Crust
  • One Can of Refried Beans
  • Ortega Taco Sauce
  • Half Pound Ground Turkey
  • Taco Seasoning
  • Shredded Lettuce
  • One Tomatoe (Diced)
  • Shredded Cheese

Directions:

  • Pre-bake pizza crust for 7 mins
  • Cook turkey meat and mix in taco seasoning according to directions
  • Once crust is pre baked, with a spatula add re-fried beans
  • Add taco sauce just as if you were adding pizza sauce to a regular pizza
  • Top with crust with ground turkey mixture
  • Top with shredded cheese
  • Put pizza back in oven for about another 10mins or until cheese is fully melted
  • Remove from oven and let cool before serving
  • Have shredded lettuce, tomatoes and any other toppings off to the side for you or your guests to top your pizza with!

Crowd Pleasing Crockpot Queso

What’s a game without queso and chips?! Such an easy dip to make – it will become a staple for every game day.

Ingredients:

  • Big block of Velveeta Cheese (if you are feeling adventurous try the Queso Blanco flavor)
  • 3 can Rotel Diced Tomatoes (again, feeling adventurous try the spicy flavor)
  • 1lb of ground beef, ground turkey or chorizo

Directions: 

  • Turn crockpot to high
  • Dice Velveeta block into cubes
  • Add to crockpot
  • Add cans of Rotel
  • Cook meat
  • Stir dip every 30mins or so
  • Once completely melted, add meat, stir
  • ENJOY!

Sooner Veggie Chili with Butterscotch Cowboy Cornbread

Hosting a Bedlam party? These two combinations will sure unite a house that is divided!

Ingredients for Sooner Veggie Chili:

  • 1 bag frozen okra
  • 1 bag frozen corn
  • 2 cans red kidney beans
  • 1 zuchinni, chopped
  • 1 squash, chopped
  • 1 yellow onion diced
  • 3 cans fire roasted tomatoes
  • 1 can tomato sauce
  • 1 packet chili seasoning

Directions for Sooner Veggie Chili:

  • In a large pot, over medium saute’ diced onion
  • Add all other ingredients
  • Stir in chili seasoning packet
  • Stir every 10mins until it becomes a chili consistency
  • Serve with  Butterscotch Cowboy Cornbread!

Ingredients for Butterscotch Cowboy Cornbread

  • 2 boxes of Jiffy Corn Muffin Mix
  • 2/3 C Milk
  • 2 eggs
  • 1 Can of pumpkin puree
  • 1 Bag of butterscotch chips
  • 1 tsp Nutmeg
  • 1 TBS Ground Cinnamon

Directions for Butterscotch Cowboy Cornbread

  • Mix corn muffin mix according to box
  • Add 1/2 cup pumpkin puree, stir
  • Add 1/2 cup butterscotch chips (or more if you love butterscotch as much as me)
  • Add nutmeg
  • Add Cinnamon
  • Pour into baking dish and sprinkle with cinnamon
  • Bake according to box
  • ENJOY!

11 am Game Breakfast Casserole

It happens more often than not. Those games that are scheduled too early for lunch but too late for breakfast. This dish is a great option for game day brunch!

Ingredients:

  • 2 Pillsbury Crescent Rolls
  • Dozen Eggs
  • Shredded Cheese
  • 1lb Breakfast sausage
  • 1 Green bell pepper, diced
  • 1 White onion, diced

Directions:

  • Cook breakfast sausage
  • Add bell pepper and onion
  • Place meat to side
  • In a 9×13 baking dish, line bottom completely with crescent rolls
  • In a bowl, whisk together eggs
  • Add meat mixture on top of crescent rolls
  • Pour eggs over meat
  • Top with shredded cheese
  • Bake at 375 degrees for 45 minutes
  • Remove from oven and let cool
  • Serves well with jelly flavor of your choice!

The Original Pigskin Bacon Wrapped Wieners (or Dates)

Need a simple appetizer? No one can resist bacon wrapped anything – these are sure to be a hit!

Ingredients:

  • 1 Package of bacon (or dates)
  • 1 Package of Lil Smokies (I prefer the turkey but many love the beef)
  • Brown sugar

Directions:

  • Line a cooking sheet with foil
  • Cut bacon strips into 4 pieces each
  • Wrap lil smokies/dates with bacon, and place on cooking sheet
  • Sprinkle wrapped smokies/dates with brown sugar
  • Bake @375 for 30mins or until bacon is fully cooked
  • Remove from oven and let cool
  • Serve with tooth picks

Secret Play Brownies

I have a little secret about these brownies. I once in my life did the Paleo diet. I craved brownies. I came across this recipe, and was shocked how I could not tell the difference between box brownies and this version. Its a fun secret to share with your guests after they give you several compliments about how delicious the brownies are!

Ingredients: 

  • 1 C almond butter
  • 1/3 C maple syrup
  • 1 egg
  • 2 TBS oil
  • 1 tsp vanilla
  • 1/3 C cocoa powder
  • 1/2 tsp baking powder

Directions:

  • In a large bowl whisk all ingredients together
  • Pour into small baking dish
  • Bake @325 for 20-25 mins
  • Remove from oven, let cool
  • Serve with secrecy!

Interception Cookies

This maybe the easiest recipe out of all. I saved the best for last. The trick to these cookies is NOT to follow the directions. Your guests will rave about how these are the most chewiest cookies they have ever had.

Ingredients:

  • 1 Package of store bought cookie dough

Directions:

  • DO NOT follow cookie directions
  • Bake @ 375 for SIX minutes
  • Remove from oven (the cookies will not look done but trust me they are)
  • Let cool for six minutes
  • Consume at least 3 cookies during game duration
