My love of all things breakfast runs deep. And I truly believe it when they say breakfast is the most important meal of the day. I want to give my kids the best start to their day I can give them. And while cold cereal is a necessity some mornings, I want to challenge you to go beyond the bowl of cereal. Try some of these quick and easy breakfast ideas to send your kids off to start their day. Their belly’s and their brains will thank you for them.
Granola
Granola can be used multiple ways and the recipe is very forgiving. You can add what you like and take out what you don’t My kids favorite way to eat it is as a parfait. Layer granola, yogurt and fruit. Just set out the components and let them put it together. If you don’t want to make it, you can certainly buy it. But here is my granola go to recipe.
3 cups uncooked regular oats
1 cup wheat germ
1/2 cup chopped pecans
1/2 cup sliced almonds
1/3 cup sunflower seeds
1/2 tsp ground cinnamon
1/4 honey
1/4 maple syrup
2 Tbsp brown sugar
2 Tbsp canola oil
1 cup craisins
Combine first 6 ingredients in a large bowl and stir well. Cook the honey and next 3 ingredients in a saucepan over low heat, stirring until sugar dissolves. Pour over the oat mixture and stir until mixture is moistened. Spread mixture in a lightly greased, foil lined jelly roll pan. Bake at 350 degrees for 25 minutes or until golden, stirring every 5 minutes. Invert onto wax paper and let cool 30 minutes. Stir in dried fruit.
Hold the “Mc” Egg Muffin
For those mornings you might have to eat in the car, this is a great one to take with you. McDonalds may have made it famous, but I think my version is tastier. And yours will be too
English muffin
Fried egg (hard)
Bacon, or canadian bacon, or ham
Cheese of your choice (Pictured is goat cheese because I’m a little obsessed with it and why not? But my kids prefer good ole cheddar)
Put all these together making a sandwich and wrap in foil and pass them off to your husband, kids, and whoever else might need a breakfast on the go. No drive through necessary.
Breakfast Burritos
Another one you can wrap up and take with you for all to enjoy in the drop off line. Bonus on this one, make it the night before and pop it in the microwave if you want. Use any, all or a few of these ingredients to build these to everyone’s liking. This is a 5 minute meal and can be filled with all kinds of hidden nutrition.
Tortillas
Scrambled eggs
Salsa
Shredded cheese
Spinach
Tomatoes
Bacon crushed into bits
Red, yellow, orange peppers
Saute veggies then add eggs and scramble. Roll up in a flour tortilla. Wrap in foil if you need it on the go.
