Addicting “Ice Cream” Sandwiches

There are certain things in my life that I am addicted to and one major addiction in my life would be desserts. I feel like I always need to have a dessert after my dinner.  Maybe it’s my reward for being a good girl and eating it all {or that is my excuse}.  I quickly figured out that all desserts are not made equal to which I desperately had to find alternative ways around the sinful course in order to treat myself without doing any harm – weight gain.

I came across a recipe – it’s been so long I’m not even sure where – that I tweaked to create a better alternative to an Ice Cream Sandwich. These ice cream sandwiches are half the calories (100 calories) and are great for the warmer weather approaching to have a light dessert to cool off with. In fact, my son already has made big plans that include swimming right after consuming one of these frozen treats from heaven.

Follow the super easy steps to be on your way to enjoying a delightful {sinless} treat!

You will need:

Cool Whip, Bananas, Strawberries, Graham Crackers

 1. Cut up desired fruit choices – I used a whole carton of strawberries and two bananas but really want to venture out and try blueberries or blackberries next time!

2. Using a food processor or blender, slightly puree the fruit, not fully blended, but just to a finer chopped consistency

3. Pour fruit into a big mixing bowl –  add a whole tub of cool whip – mix

4. Line a baking sheet with either wax paper or aluminum foil

5. Break apart one whole graham cracker into half leaving you with two graham cracker squares

6. Using a spatula, spread cool whip mixture on one side of square and place the other square on top – this is my favorite part because I love to lick the spatula and bowl after!

7. Fill baking sheet and place in the freezer for about 30 minutes

8. After frozen, place ice cream sandwiches in a freezer ziplock bag to store AND enjoy!
(One recipe will yield a little over 30 ice cream sandwiches)

My son, Noah, thanks me with such a humble spirit every time he has one. I am also guilty of making a SECOND batch in just a three week time period. You do the math.
